Veganuary: three recipes to try
Veganuary is a popular annual event that encourages people to try a vegan diet for the month of January. If you're participating in Veganuary, or if you're just looking for some delicious and healthy vegan recipes, here are a few ideas to get you started:
Vegan lentil curry: This dish is packed with protein and flavor thanks to the lentils and a variety of spices. Serve it over rice or with naan bread.
Ingredients:
1 onion, diced
2 cloves garlic, minced
1 inch ginger, minced
2 cups red lentils
4 cups vegetable broth
1 can diced tomatoes
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
Fresh cilantro, for garnish
Instructions:
In a large pot or Dutch oven, sauté onion, garlic, and ginger in a bit of oil over medium heat until softened.
Add the lentils, broth, diced tomatoes, and spices. Bring to a simmer and cook until the lentils are tender, about 20-25 minutes.
Season with salt and pepper to taste (or my favourie: red chilli flakes).
Serve the curry over rice or with naan bread, and garnish with fresh cilantro.
Vegan Caesar Salad: This classic salad can easily be made vegan by using vegan mayo and parmesan cheese. Try this healthy and tasty recipe for a Caesar salad without the anchovies
Ingredients:
1 head of romaine lettuce, chopped
1/4 cup vegan mayo
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 tablespoon lemon juice
2 teaspoons capers
1/4 cup vegan parmesan cheese, grated
Salt and pepper, to taste
Croutons, for garnish
Instructions:
In a large bowl, whisk together the vegan mayo, garlic, Dijon mustard, lemon juice, capers, vegan parmesan cheese, salt, and pepper.
Add the chopped romaine lettuce to the bowl and toss until coated.
Serve the salad with croutons on top.
Vegan Mac and Cheese: This comfort food classic can be made vegan using nutritional yeast and vegan butter
Instructions:
Preheat your oven to 375F.
Cook the macaroni according to package instructions, then drain.
In a saucepan, melt the vegan butter over medium heat. Add the flour and whisk until the mixture forms a paste.
Slowly add in the non-dairy milk, whisking constantly until the sauce thickens.
Stir in the nutritional yeast, salt and pepper.
Add the macaroni to the sauce and mix well.
Transfer the macaroni to an oven-proof dish and top with breadcrumbs.
Bake for 20-25 minutes, or until the breadcrumbs are golden brown.
